Strawberry Mascarpone Baskets

10 sheets phyllo dough, thawed
¼ c. butter
5 tsps. sugar

1 lb fresh strawberries, leaves removed and quartered
¼ c. sugar
1 tbsp. orange zest
1 tsp. lemon juice
½ c strawberry preserves
8 oz mascarpone cheese
4 oz whipped cream
½ tsp. vanilla
⅓ c powdered sugar
1 tbsp. balsamic vinegar

½ c each of red and green Wilton Candy Melt discs

Prehead oven to 375 degrees. Spray cups of jumbo muffin pan with nonstick cooking spray. Unroll phyllo dough and remove a single sheet.  Brush with melted butter and sprinkle with ½ tsp. sugar. Place a second single sheet of phyllo dough over the first and repeat brushing with melted butter and sprinkling with sugar. Repeat until 5 sheets of phyllo dough are stacked together. Measure and cut dough into 2 - 7” x 7” rectangles (there will be excess). Place rectangles into muffin pan cups and mold to c. leaving edges standing. Repease with remaining phyllo dough to make another two baskets. Bake for 10 minutes. Gently lift cups from pan and place on a cooling rack. Allow to cool completely.

Mix ½ tbsp. of the orange zest, lemon juice and sugar with strawberries to coat them. Let strawberry mixture sit for 30 minutes.

Mix cheese, whipped cream, powder sugar, remaining orange zest, vanilla and strawberry preserves. Place in refrigerator.

Drain strawberries and put liquid in a small pan with balsamic vinegar. Bring to a boil on medium heat. Continue to boil until liquid reduces to a syrup consistency and coats a spoon. Remove from heat and set aside.

Take cheese mixture from the refrigerator and place in a piping bag. Pipe a layer of cheese into the bottom of each cup. Fill the cups almost to the top with strawberry mixture. Brush strawberries with the balsamic glaze. Pipe a second layer of cheese on top of strawberries.

Melt candy discs in separate bowls in a microwave and place in piping bags. Pipe strawberry designs onto wax paper set on a cookie sheet using writing cake decorator tips. Place decorations in refrigerator until firm and gently remove from wax paper with a small metal spatula. Place one candy strawberry on top of each cup. Serves 4.
